Silky Stuffed Aubergine

Legend has it that an Ottoman imam fainted with sheer delight upon tasting this dish — and thus its name was born. İmam Bayıldı ("the imam swooned") is one of the most beloved jewels of the Ottoman palace kitchen, perfected over centuries in the hands of home cooks across Anatolia and the Aegean. Whole aubergines are split open, slow-braised in pools of olive oil, and filled with a fragrant tumble of sweet onions, ripe tomatoes and garlic. Served at room temperature, it is a patient dish — and patience, here, is everything.

The Story Behind
the Flavours

I'm Muge Kayaci — a home cook, food writer, and obsessive keeper of recipes that refuse to be forgotten. I grew up trailing my grandmother through the olive groves of İzmir, watching her transform a handful of wild herbs and dried pulses into meals that felt like entire conversations.

Her village kitchen in the Aegean foothills was my first classroom. No written recipes — just instinct, memory, and a deep respect for the land. When she passed, I realized how many of those dishes were quietly disappearing with her generation.

mugekayaci is my answer to that loss. Here, I document and celebrate vanishing Anatolian recipes — testing each one in a modern kitchen while honouring every tradition behind it — so that cooks anywhere in the world can bring these flavours to their own tables.
